Porcelain Group – They are named for their white bulb wrappers that are thick and cover the few, but large cloves tightly. Being the densest of all garlics, they are quite possibly the most beautiful of garlics. Depending on growing conditions, they may have variations of purple, pink or tan. Allicin, which increases circulation, boosts immunity, and lowers cholesterol, is a major component of Porclains, contributing to the high sulfurous taste. Porcelains produce a scape which is harvested several weeks prior to harvesting the garlic in order for plant energy to be routed to the bulb. Bulbs are typically large with 4 to 6 cloves, easy to peel. Stores 5 – 10 months and does well in cold climates
German White – Originally from Canada, a porcelain with a bit of heat when eaten raw, a moderately spicy flavor, but not too hot and mellows into a flavorful gentle taste with cooking. These ivory-white bulbs average 4-6 very fat, large cloves that are very easy to peel. They have an excellent flavor for cooking and are great for roasting, sauteing and adding to soups and casseroles. Stores up to 10 months in cool temperatures. It is easy to grow in a cold climate. Music – Another very popular porcelain brought from Italy by Al Music. This a very hardy garlic and easy to grow and peel. Sweet and pungent, very hot when eaten raw but balances out into a mellow, garlicky flavor when cooked. As with the German White, it is great for roasting, sauces and salsas. The bulbs contain 4 to 5 large cloves that are wrapped in a skin with an attractive purple color. Music has very good storage. It generally does better in areas with colder winters. Rocambole Group – These varieties are well known for a true garlic flavor. They are more sweet and less sulfurous than other garlic varieties. Grows in a climate with a cold winter. They have a wonderful taste raw. This group also produces a scape. Bulbs are off-white and streaked with purple. Cloves are easy to peel. Bulbs contain 7 -12 cloves and will store 4-5 months.
German Red – Of the Rocambole Group, this garlic has a full flavored, zingy taste. It adds deep savory flavor to vegetable dishes, stews, roasts and game without overwhelming the other foods. Cloves are typlically 7-9 per bulb and easy to peel. Store 3-6 months, packed with flavor. Grows well in mild to cold climates. PLACE ORDER FOR 2022

Purple Stripe Group – These garlics are known for robust, rich, well-rounded true garlic flavor. Thought to be the best tasting of all garlic groups, being sweeter and less sulfurous. Grows well in a cold winter climate. Bulbs are a creamy white streaked with purple, containing 7 to 12 cloves. The cloves themselves are brownish and easy to peel. Storage for this group is 4 to 5 months. A scape is produced in spring time. These garlics are wonderful fresh, raw with a warm aftertaste.
Vietnamese Purple – This purple stripe variety is mildly spicy and dissipates quickly. Has a high sugar content making it very sweet when roasted and easier on your stomach. It is not overpowering in food dishes but still provides a creamy mellowy garlicky flavor and stupendous when cut into thin slices and sauteed with favorite meats or in sauces and soups. Italian Purple – in striped, purple skins, this a very popular garlic. It is fairly mild with a delicate, sweet, pungent flavor. A burst of heat is slow in coming but then quickly fades. This is a wonderful garlic for salsas and dishes but not recommended for roasting. Large bulbs are quick maturing, producing 8-10 creamy

Chesnok Red – This garlic was developed in the Southern Republic of Georgia. Chesnok Red holds true to the Purple Stripe characteristic of great baking garlics and has won awards for the best tasting and sweetest of these. When used raw, the intense heat quickly dissipates but cooking truly brings out its rich smooth sweetness. It adds a sweet garlic flavor to dishes without the heat. Chesnok Red is a great roasting and sauteing garlic as well. Chesnok Red is an easy garlic to grow, producing large bulbs that are easy to peel. 9-10 thin, pinkish red, cloves form per bulb. Turkish Red – in the Turkish Mountains near the black sea, this garlic has an intense, pungent flavor with medium heat. It is a great choice for a robust full-bodied garlic flavor. It is excellent for roasting. Turkish Red tends to have fewer cloves, 6-8, than other purple stripe varieties but are larger and more squat. Scapes coil and curl dramatically. It has very good storage qualities, keeping up to 9 months. PLACE ORDER FOR 2022
